West 52 BBQ is different. Here’s why.
The Story
I’m Troy Johnson. I grew up in the South, spent years in the United States Marine Corps, and carried a very specific idea of what BBQ should be through all of it. When I settled in Shorewood, IL, I couldn’t find what I was looking for within 30 miles. So I built it myself.
West 52 BBQ opened at 805 W Jefferson St in Shorewood because that’s where we put down roots. The name comes from the highway — US Route 52 runs right through this part of Will County, connecting Shorewood to Joliet and the surrounding communities. It’s home, and the restaurant reflects that.
What We Actually Serve
The menu is built around what comes out of a real smoker after real time. That means brisket that’s been on since before most people are awake. Ribs that bend without snapping, not because we steamed them but because we gave them the hours they needed. Pulled pork that’s hand-pulled, not processed through a shredder.
Sides are made from scratch — no shortcuts there either. Our mac and cheese, coleslaw, and baked beans are actual recipes, not products from a bag.
We don’t do a 47-item menu. We do a focused selection of things we make well, consistently, every service. When something isn’t right, it doesn’t go out.
The Military Standard
The Marines have a phrase: “Standards, not feelings.” What that means in a kitchen is that the brisket doesn’t go out because the clock says it’s done. It goes out when it probes tender at 202°F and holds a proper rest. The ribs don’t go out because a timer went off. They go out when they pass the bend test.
That’s not a marketing angle. It’s how I was trained to operate, and it’s the only way I know how to run a kitchen. The discipline of military service translated directly to running a BBQ operation where the margin for error is thin and the only acceptable standard is the one you set.

We’re at 805 W Jefferson St, Shorewood, IL 60404. We run Thursday through Sunday service — check current hours before you come, because we do sell out. When the brisket is gone for the day, it’s gone.
